Smoked potato and leek soup
Heat a few good lugs of olive oil in a large pot. Add 5 cloves roughly chopped garlic, 1/4 cup chopped chorizo or hot salami and as much smoked paprika as you feel is necessary. After a minute or two add 1 finely sliced leek. Cook over a low-medium heat until the leek is soft, adding more olive oil if necessary. Add 8-10 unpeeled and finely diced red-skinned potatoes and a healthy shaking of dried oregano. Stir well and cook for a further three minutes. Cover with boiling water; you may wish to use a combination of liquid chicken stock / water as your tastebuds demand. Bring to the boil then simmer with the lid on until potatoes are soft. Blitz with a stick blender and ladle into the largest bowl(s) you can find.
