First day of summer calls for a picnic. Homemade fish and chips.
Baby spinach, several handfuls
Tomato, diced
Garlic aioli, lots of
Tofu, cubed
Cracked pepper
90 seconds preparation time. Not too much longer to consume.
Crumbed eggplant, roast tomato and baby spinach salad.

Fry diced chicken breast in olive oil until cooked through (use the oil from the semi-dried tomatoes if possible - it’s full of flavour). Add roughly chopped chorizo, semi-dried tomatoes and dried oregano, cooking until chicken has browned nicely and the chorizo is starting to turn crisp. Add courgettes, sliced into rounds, and canned whole peeled tomatoes (skip the juice). Cover, and allow the tomatoes to break down and courgettes to soften, stirring occasionally. Stir through cooked pasta and serve. Easy.
